ounces fresh mozzarella, packed in water, 2 slices high-quality
white bread (pane in cassetta), made from unbleached flour, and 2
tablespoons Black Olive Pesto.I love the simple, yet satisfying contrast of salty black olives and light, dairy-fresh mozzarella. This tramezzino makes a delicious lunch, along with a glass of fizzy Italian mineral water.
Slice the mozzarella and drain on tea towels. Trim the crusts off the bread (this is optional but makes the tramezzino look more "finished"). Spread pesto on both slices of bread. Layer mozzarella slices on 1 slice of bread and cover with the other bread slice.
Makes 1 tramezzino.
