Avocado and Goat Cheese Crostini

single Ingredients: 1 ripe avocado, 5 1/2 ounces goat cheese, softened at room temperature, 1 teaspoon extra-virgin olive oil, 1 tablespoon lemon juice, Salt and freshly ground pepper, 24 thin rounds of bread, cut from a narrow baguette-style loaf, and Extra-virgin olive oil for bread.

Avocado goes well with tart lemon and lime juice, so it's well matched with tangy, lemony goat cheese. Although this spread sounds incredibly rich, keep in mind that goat cheese is relatively lean and that only one avocado is used for 24 crostini. These pretty pastel-green crostini make an unusual appetizer to serve with drinks.

Pit and peel the avocado. Place in a bowl and mash until smooth. Add the goat cheese and drizzle with olive oil, lemon juice, and salt and pepper to taste. Use a fork to a mash the ingredients together, stopping before the goat cheese and avocado are completely blended. Taste and correct seasonings. Brush the bread on one side with oil and arrange with the olive oil side up, on a cookie sheet. Bake in a 350 oven for 8 to 10 minutes until crisp but not hard-toasted all the way through. Mound a little avocado-cheese mixture on each piece of bread.

Makes 24 small crostini.
