I saw on your site the section on bouncing ideas off of you. Fortunately my idea
is precisely your line.
I am interested in starting a restaraunt in my town. I live in Alpine where there
are many restaraunts but only a few with quality. My partner in the business will
be someone who worked at Riatta as the kitchen manager and was responsible for
many a write up in Texas Monthly. I come from a background in 5 Star Restaraunt
management through Club Corporation of America. I am not worried about the quality
of service or the quality of food but the initial investment, equipment, startup
etc. I thought with your expertise in this field you might have an idea of what
kind of initial investment one would need to stay afloat during the horrible first
years. I know it is an insane venture to start and most think the idea is horrible
due to the long hours and energy involved. I love the idea. Any ideas or numbers
you may have to help me would be GREATLY appreciated. I know you can not give
exact but possibly the ratio/yr of investment vs everything else kind of data.
