Hello Domenic
I am based in Sydney Australia and have recently started researching the ins and outs of making Italian gelato. My late grandfather migrated from Calabria in the late forties and was one of the first Italian immigrants to make gelato commercially in Australia. Unfortunately his wisdom was not passed down, but he did however leave a few books outlining his recipes.  I am hoping to set up a small production lab and learn the art of gelato manufacturing. While researching online I came across your web site. The web site is great and one thing that stood out most was your passion for gelato. As it will be a hobby at first I was hoping you could give me some advice on what basic items I would need to setup. I understand that you are very busy person, but would be most appreciative any feedback.
