Lots of my competitors want you to believe that the espresso machines are some complex piece of equipment that you need to graduate from MIT in order to understand it. Let me assure you first that karmagadine the president of Iran is not using an espresso machine to enrich uranium neither is the leader of North Korea using an espresso machine to keep his troops well fed and the few elite Russians are not acquiring billions through commercializing in espresso machines and neither is Nasa using espresso machine technology to send rocket to the moon.

The espresso machine is a simple device that heats water to about 190/195 degrees and creates steam in the upper part of the boiler where there is no water in addition the machine is able to push this hot water through finally ground coffee and produce one shot of espresso or two in 20 seconds. During this 20 seconds that the machine is squeezing the goodness out of the coffee you are able to use the steam and have ready enough milk frothed to make one or two cappuccino, that is all the wonders that the machine does and some companies are able to siphon upward of 20 and even 30 thousands of dollars out of your pocket. If you believe that math is no myth then you are able to comprehend that with a simple one group machine you can produce comfortably a 120 cappuccino per hour which translate into 1,200 per a 10 hour period which more importantly will place over $3000 in your till by the end of the day that is what could happen in a perfect world but since we want to be ready for an imperfect one then we will go for a 2 group machine that would (theoretically) with a simple 30 minutes training (same training you would require for a 1 group machine)produce twice as much.

Of course the people that sell you those expensive babies want you to believe they are (and that is what they call) idiot proof. They want you to believe that today all young people are idiots and therefore you cannot do without an idiot proof machine. I want to tell you at this point that the only idiot proof thing you can do when in business is not to hire idiots.

In addition to this problem, the so called idiot proof machine will deprive you of the best part which it is to make a cappuccino the proper way and that is the only way I think a cappuccino should be made except in cafeterias and in star bucks coffee houses.
