It sounded so wonderful , so profitable, so rewarding! Just back from a vacation in Italy and being impressed by all the gelato they were able to enjoy every single day they were there, Mr&Mrs dreamed of opening their own gelateria in Toledo Ohio, they would produce and serve the most authentic gelato anywhere and they would reap huge financial rewards. Dream? definitely! attainable? workable? realistic? none of the above in my opinion; so very few locations in the country can make a plan like this a reality that is not even to be considered. Call the top ten of your search engine choices and only one will tell you the way it is, the others will tell you the way you like to hear. The reality is your plan is unworkable (to be profitable), gelato is "fun", to make money you need food. I have seen it happening over and over countless times : the guy in Jackson who lost his shirt along with over a quarter million dollars selling"ONLY"authentic gelato, and this after impressing everybody in the city and being hailed as the best the city has ever seen. I bet nearly everybody in Jackson tried and enjoyed his product, just not often enough. In desperation he started selling (believe it or not) spaghetti & meatballs to augment sales. Same story in Addison Texas.Last month this guy opened the place he dreamed for a long time" fifty thou for a top of the line Italian gelato maker a 24 pan dipping cabinet and a marble slab......................and not enough sales later he is now (believe it or not) selling hot dogs ot pay the rent. Odd as it may seem his place does not serve cappuccino! And how about Gelare, a very popular gelato place on Lemon ave. in Dallas that faded (it became very popular for a few month) sooner than it started. I could list many other casualties but is not necessary what it is is to understand that gelato although exciting and very glamorous needs to be featured as part of a team and not to be "The only player". The team in my opinion should have "panini" as quarterback, gelato and coffee (cappuccino drinks). That is the formula for success!!
